Urban Farming & Tinola!

This week on the show, we're talking food in the city with Urban Farmer Novella Carpenter. Novella lives in the heart of Oakland, Ca and has slowly converted the deserted lot next door into an urban farm complete with a veggie patch, chickens and rabbits. Her new book "Farm City" choronicles her time on the 'farm', and we're curious to hear the story.

Do you know what Tinola is? We didn't either.........until we met up with Seattle food writer, Angela Garbes. Tune in to learn a trick or two in making a traditional Filipino dish.

We have our weekly wine pairing with Michael Teer of Pike and Western Wine Shop, who is also hosting the upcoming Festa Piedmonte, our Recipe of the Week, and What's Your Special? - this week with Green Go Food in Ballard - the sustainably-focused cafe with organic food to go, located in the heart of Ballard.

Secret Ingredients

We have lots of little bits and bobs and recipe secrets to share with you this week, so be sure to tune in.

Our first guest, Erin McKenna, owns BabyCakes NYC - pretty much the most popular cupcake joint in NY. Thing is....these are no ordinary cupcakes. We're talkin' gluten-free, vegan, organic, all natural sweetener-type of cupcakes. Not only are they safe for most food allergies, they're darn near healthy! (ok, not really). Tune in to hear Erin's secrets on how they taste so good, even without all that butter.

Following that, we have on local gourmand from Secret Stash Salt, co-owner Janna Wemmer. You can find her every Sunday at the Ballard Farmers Market handing out samples of her heavily-scented salts with flavors like Bloody Mary and Cherry Pistachio. You can use them in baking, to fancy-up a cocktail or to take dinner to the next level. If we're lucky, Janna will be sharing some of her secrets LIVE, so be sure to have a pen and paper ready.

We'll have our weekly wine pairing with Michael Teer of Pike and Western Wine Shop, a Recipe of the Week, and What's Your Special? - this week with Urbane Restaurant - the sustainably-focused restaurant down at the brand new Olive 8 Hyatt. See you in the Kitchen!

May 30th

Summer is nearly here, and we've been feeling it lately with all this sun! Tomatoes are in the ground, carrots have been seeded and the farmers are hauling their loot over the mountain from eastern washington to bring us seasonal goodies a bit earlier than we could ever grow on our own. Yeah for farmers markets (!) most of which opened this month. For a full schedule, make sure to check out these twosites.

On today's show, we're celebrating all that is local, kicking off with Teatro Zinzanni actor Joe De Paul who plays Ricky, the spoiled but big-hearted son of the owner of the tent. Teatro Zinzanni recently added brunch on the weekends and Ricky is set to tell us all about his breakfast shenanigans under the tent.

We are happy to welcome back Kelsey Kozak, formerly a teen cheesemaking sensation from Vashon Island and now a first term student at the Culinary Institute of America.

As always we'll have our weekly wine pairing with Michael Teer of Pike and Western Wine Shop, a Recipe of the Week, and What's Your Special? - followed by an hour long call-in Ask the Chefs. Thanks for listening this week, In the Kitchen with Tom & Thierry!

If you've ever been curious about the homesteadin' kitchen, this is the show for you.

We have on food writer and author, Eugenia Bone, with her new book Well Preserved - Recipes and Techniques for Putting Up Small Batches of Seasonal Foods. Knew you could make jam, but never considering preserving peas? Tune in to hear some tips!

We'll also sing the praises of homemade bread, pancakes and more when we talk with Jill Lightner, Editor of Edible Seattle about yeast and starter for baked goods.

We'll have our weekly wine pairing with Michael Teer of Pike and Western Wine Shop, a Recipe of the Week, and What's Your Special? - this week with Homegrown - a new sustainable sandwich shop in Fremont.

May 9th

Can you believe we are already in May? Seems like only yesterday we were mulling over tips for braising meats, and now spring has sprung and we have fresh clean food on the tips of our tongues.

This week on the show, Chef & Author Scott Uehlein chat with us about making "indulgently healthful" meals at home. His years in the spa kitchen at Canyon Ranch in Tucson, Arizona shine through in his new book Canyon Ranch: Nourish, a great one to add to the kitchen cookbook line up.

Tom and Thierry continue the 'fresh' theme with our ingredient spotlight on RHUBARB this week. Rhubarb is just up in the Pacific Northwest and a sure bet if you're looking to eat local. This vegetable (yes, it's a vegetable!) is often thought of for pies and tarts, but how about alongside pork or pate? Delicious.

In the last hour, chefs offer suggestions for Mothers Day this week and answer your calls for Ask The Chef, an open food forum from our kitchen to yours. We have our weekly wine pairing with Michael Teer of Pike and Western Wine Shop, Artichoke Fritters for Recipe of the Week, and What's Your Special?

Thank you for listening & we'll see you in the kitchen!

On the radio.....

Today on the show is chef and author Takashi Yagahashi from Chicago on to talk with us about the many Asian noodles we can use in our kitchens - udon, soba, rice & ramen. Listen in as he demystifies these traditional ingredients in Asian cooking.

In the studio is local cook & author, Kathleen Finn. Kathleen is running a home-cook study on how people really cook at home. She'll walk us through a quick an easy homemade mac-n-cheese (buh bye Kraft!) and give home made substitutions for other processed food home cooks typically rely on. It's a great subject to listen in and learn from!

As always, our last hour, call in and join Tom and Thierry for Ask The Chef, an open food forum from our kitchen to yours. We'll have our weekly wine pairing with Michael Teer of Pike and Western Wine Shop, a Recipe of the Week, and What's Your Special? - this week with Chef & Owner Leo Varchetta of LIST in Belltown - a cozy new dig from the owner of Barolo.

See you in the kitchen!

We have LOTS of delicious food-talk happening this week 'In the Kitchen'.

Join Tom & Thierry back in the studio as they catch up on the many pies they've got their hands stuck in as of late.

We hosted author Gerald Hirigoyen of the fabulous book PINTXOS - a great one to add to the collection, as it covers the basics in tapas and small plates. We're also joined in the studio with Barnaby Dorfman of Foodista - the online encyclopedia anyone can edit. Barnaby shares his grandmothers diary and cookbook - you can see a copy of the scans over at Foodista.

In the last hour, join Tom and Thierry for Ask The Chef, an open food forum from our kitchen to yours. As always, we'll have a wine pairing with Michael Teer of Pike and Western Wine Shop, a Recipe of the Week, and What's Your Special? - this week with Chef Jordi at Cafe Lago in Montlake - a favorite of both Tom & Thierry's. 'In the Kitchen' Saturdays at 4pm on KIRO FM
Listen to 'In the Kitchen with Tom & Thierry' every Saturday at 4pm on News Talk 97.3 KIRO FM.

recipes from the show
Summer Fruit Trifle
Everyone agrees that a trifle should be composed of layers of cake, sweetened cream, and fruit -a heavenly trilogy by all counts. The disagreement stems from what type of cake to use; what type of cream and what type of fruit.
Chicken Tinola
Adapted from Galing Galing Philippine Cuisine and Writing With My Mouth Full.
Cornbread
Rather than fight the will of the people, I dived right into development mode, and after a year of sorry results, finally perfected the recipe. I hope you'll agree it was well worth the effort.
